Baked Salmon

Ingredients:
3 tomatoes, chopped, or 1 14 oz can diced tomatoes in juice, drained
2 shallots, chopped
2 TBS, plus 2 tsp. olive oil
2 TBS fresh lemon juice
1 ½ tsp chopped fresh oregano or ¾ tsp dried
1 ½ tsp chopped fresh thyme or ¾ tsp dried
1 tsp salt
¾ tsp freshly ground pepper
4 salmon fillets (about 5 oz each)

Directions:
Preheat the oven to 400 degrees F. In a medium bowl, stir the tomatoes, shallots, 2 TBS of oil, lemon juice, oregano, thyme, ½ tsp of salt and ¼ tsp pepper. In the center of each of the four sheets of aluminum foil, spoon 1/2tsp of oil. Place 1 salmon fillet atop each sheet of foil and turn to coat with the oil. Sprinkle the salmon fillets with the remaining ½ tsp each of salt and pepper. Spoon tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely and seal packets closed. Place on large baking sheet and cook for 25 minutes or until salmon is cooked through. OK, I have given you the real directions, but in my world, I put the salmon in 1 big foil (because I use 1 big fillet, not small pieces) , mix all ingredients together at once, seal and bake. This recipe tastes great with any type of white fish too, or chicken.
